She drove bus #22 for 21 years. She died before Glenn was born, but it felt like she was with us when the first bus he ever had to ride to school was bus #22.
Mom's Ham Hock's and Beans
  • 1 pound navy beans
  • 2 ham hocks
  • 1 & 1/2 Tbsp chopped onion
  • 3 shakes hot pepper sauce
  • salt and pepper
  • 1 tsp corn starch
  • 1/4 cup milk

  • Fresh Baked Cornbread
Rinse and soak 1 pound bag of navy beans in water overnight. Do Not Drain. Bring beans and liquid to boiling. Add 1 & 1/2 pounds (2 each) ham hocks. Reduce heat. Cover and simmer about 1 hour or until beans are nearly tender. Remove hocks and cool. Cut off meat and coarsely chop. Discard skin & bones. Return meat to pan. Add 1 & 1/2 Tbsp chopped onion and 3 shakes of hot pepper sauce. Stir well. Add salt and pepper liberally to taste. Cover and simmer 30 minutes. If doesn't thicken, dissolve heaping teaspoon of cornstarch in 1/4 cup milk and use to thicken.

Serving suggestions:
Serve hot with fresh cornbread.
