Texas Brisket
  • 3 - 4 lbs. beef brisket (Not corned-beef)
  • 1 onion, sliced
  • 1/4 cup chili sauce
  • 2 Tbsp brown sugar
  • 1 clove garlic, curshed and minced
  • 1 - 12 oz. can beer
  • 2 Tbsp flour
  • salt and peper
Trim excess fat - In 13" x 9" pan, season with salt and pepper. Cover with sliced onion. In separate bowl, combine chili sauce, sugar, garlic, and beer. Pour over meat and cover tightly with foil. Bake 350 degress for 4 hours, uncover during last 30 minutes. Baste every so often. Measure liquid, add water to one cup. Blend with flour and half of water. Combine drippings in sauce, stirring until thick over medium heat.

Serving suggestions:
Cut meat criss cross to grain and burn fat on grill to seal.

About the cook:
This was Aunt Lois' recipe. She always had smiles and hugs to go around and made everyone feel welcome. Texas Brisket, yummm! She sure was a great cook. She had a million little ways to do things - like when making potatoes and she only had a little margerine left in the tub, she would put some of the hot potatoes in the tub to melt the margerine to get every drop.
